We're taking normal banana bread up a notch by infusing the butter with Masala Chai loose leaf tea for the ultimate holiday treat! With just the right amount of spices, this is a perfect treat for cold days.
Masala Chai is the classic chai - consisting of spices like aniseed, cinnamon, ginger, peppercorn, and cloves. Instead of gathering all the different spices on your own, use a high-quality loose leaf Masala Chai that adds a perfect balance of spiced flavor to your banana bread with ease.
2 tbsp Masala Chai loose leaf tea
9 tbsp unsalted butter
3 ripe bananas
3/4 cup granulated sugar
2 large eggs, beaten
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1 cup chopped walnuts or chocolate chips (optional)
Preheat oven to 350 degrees.
In a small saucepan, melt 9 tbsp butter until just liquid. Add 2 tbsp Masala Chai loose leaf tea.
Continue heating mixture for 5 minutes on low heat.
Remove from heat and let sit for an additional 3-5 minutes or until the butter is noticeably tinted by the tea leaves.
Pour the mixture through a fine sieve into a medium bowl. Do not press or squeeze the tea leaves as this will release a bitter flavor. Set off to the side to get to room temperature.
While butter cools, grease and flour a bread loaf pan.
In a mixing bowl, cream together chai-infused butter and 3/4 cup sugar.
Mash 3 bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until well blended.
In a sperate small bowl, whisk together 1 1/2 cups of flour, 1 tsp baking soda, and 1/2 tsp salt and then add to batter along with 1/2 tsp vanilla extract and any additional add-ins you'd like (walnuts, chocolate chips, etc).
Pour into the prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
Slice and enjoy!
